Who doesn’t love a good carrot cake! And if it is also guilt-free?
For this carrot cake (10 slices) 1 slice approximately has around: 70 kcal; 7 prot., 8 carbs, 1.3 fat, 2.2 fibre
Obviously, the numbers vary depending on the actual products you use.
It is a live-saver in a low carb diet and you can eat it with quark, nice-cream or any topping which your diet allows. Getting fit was never this easy!
3/4 Egg whites
1/2 Whey protein powder (unflavoured or matching flavour of your choice)
1/2 cup rolled oats
2 tbsp coconut flour (flakes will work too)
1 tsp baking powder
1/4 cup peeled and grated carrot (I added 1/2 cup and it worked well)
Cinnamon, Vanilla extract and stevia or sweetener of your choice – add according to your taste
- Preheat oven to 160C
- Blend all the ingredients together, except grated carrot
- Stir the carrot and place batter into your cupcake or loaf pan, remember that batter will ‘grow’ so do not fill the pan for more than 3/4
- Bake 35-40 minutes
- Remove from the oven and leave to cool
