Shredding CabCorn Salad

Another simple shredding salad for our Week of Cleanse on Week 1 for VS Angels Challange which you can read about here. This one has cabbage in it and cabbage is not something you usually see used fresh in England but I do remember it well from my motherland. No diet would exist without cabbage! Cabbage, with dill, cabbage with canned tuna, cabbage with cucumber and tomatoes, and here is my – Cabbage and Corn.


And corn is not exactly amazing for diet but I personally adore it and we only use a few tbsp. And although you may have guessed the entire recipe from the name of the salad there is a little trick you should now how to prepare fresh cabbage so it is most enjoyable.



White cabbage (about 4 cups is a good portion for 1 person)

3 tbsp of canned corn

1/2 tbsp olive oil

pinch of salt

  1. Cut the cabbage into thin strips. And place in a bowl. Add salt and mix it. Leave for 1 minute.
  2. Salt makes vegetables like cabbage start giving their juice, so after you mix it and left it for a minute, take you bare hands and give it a squeeze. You make it softer and juicier. img_4847_fotor
  3. Add corn and olive oil. Other seasonings to taste.


You can have a bowl of it for dinner and it does now leave you feeling hungry but you definitely feel much lighter in the morning.
